This flavor pays homage to Singapore, the birth place of the Chef and owner Jesse Chua, which is also coincidentally the host city to the South East Asian stage of the Gelato World Tour. Aptly named Hainanese Chicken Rice, after one of the unofficial national dishes of Singapore, this flavor consists of Asian ingredients such as fresh Pandan leaves, fresh ginger and rice milk, as well as Western flavors such as caramel, making this a truly metropolitan dish that further alludes to Singapore’s reputation as a metropolitan city. The usage of ingredients from both the East and the West also symbolizes the importance of both Melbourne, where Jesse now calls home, as well as his birth city of Singapore, which remains close to his heart.
The inclusion of chicken broth also brings about a touch of unami to this flavor, allowing Jesse to showcase the inventiveness of his flavors and his gelateria, Dex2rose, which seeks to break away from the norm and excite tastebuds while paying strict attention to the taste and quality of the gelati they produce
