I created this gelato to represent a memory of “Delizia al Limone,” a dessert I ate while traveling in Sorrento. There is a Shop called “Sal de Riso” in the little country town Minori on the Amalfi coast where people go to find Italian sweets renowned all over the world. I visited the shop, met the owner Salvatore and visited the shop laboratory. There, I had a taste of “Delizia al Limone.” This cake expressed the deliciousness of fresh lemons. I created this gelato “Delizia al Limone” from that dessert, it is really a flavor that represents a great memory.

A Tribute to the Most Serene Republic of Venice “La Serenissima” and the sweet natural flavors at the beginning of autumn: an “Uva-Fragola” grape sorbet with delicate caramelized nuts. The sorbetto base is made with “Uva-Fragola,” or strawberry grape, from the countryside near Venice, and the walnuts are finely covered with a thin layer of caramel, which does not alter the fresh and crunchy characteristics of the nuts. The flavor is sweet with a hint of tartness thanks to
the “Uva-Fragola”, and together with the caramelized walnuts, make for a unique experience!

In 2014, Pingping my wife competed smoothly into the final and at the final, Pingping and I designed rose sea salt cheese with the rose as the main flavor. Due to the rush of time, the beautiful color of rose cannot blend into the Gelato and this gelato had some defect in the texture so it only won the third place. Pingping often mentioned this. Rose symbolizes love and friendship. After roses are given to others, they leave fragrance on the hand. On December 12, 2016, Pingping died in Zhangzhou City Hospital due to precipitate labor with uterine rupture and massive hemorrhage, because the hospital did not carry out the responsibility. In order to complete Pingping’s wish and to express my thanks to the care and help from countless friends from all walks of life. I carefully designed the recipe.

When “La dolce vita di tè” won the second place in Tokyo, all of us were trilled and honored, especially because the flavor gathers all the authentic flavors from Taiwan. We use the Honey Black Tea from Alishan as the base for “La dolce vita di tè”, Alishan is the highest altitude in Taiwan and has the largest Shenmu Group; therefore, the air is very pure and fresh. The Tea is known for its special caramel aroma and amazing aftertaste that doesn’t exist elsewhere. It combines the golden mental prize Lychee Honey from Taiwan, with the wonderful flora fragrance and sour taste; it makes the taste of the gelato more complex. Finally, sprinkled the popped-black rice as the final touch, popped-black rice are made from a special rare black rice, with the rich aroma of the rice and the extra-crunchy taste, it blends perfectly well with the tea, which makes the gelato more flavorful. It presents the fun combination of Asia and Italia. We were proud that the local ingredients blend so well with the gelato, and create a whole new taste just for the Gelato World Tour.

It is a sherbet that combines pineapple, apple and celery. I sandwich the leaves of mint and leaves of basil between the sheets and transfer the refreshing aroma of herbs to the sherbet. In order to summarize the taste of the whole sherbet, we squeezed lime juice and a hint of orange juice. The composition of fruits is the ratio of apple 3.5 / celery 6.5 / pineapple 8. I designed the taste with the image of the sweetness of other fruits wrapped in the aroma of celery. It is a flavor which is recommended for spring and summer when you feel the visit of fresh green season.
